At Merope's SteakHouse in Carrara, we only use fresh, organic Tuscan and IGP Chianina beef, with a strong emphasis on local and sustainable products. Eating conscientiously is a statement that plays a significant role in our mission: all our specialities are made with fresh meat from certified and controlled supply chains.

We do not use any frozen food, and each dish is carefully and passionately prepared with seasonal and genuine ingredients, a responsible choice that benefits both small Tuscan producers and breeders. From them, we select only the best raw materials, as well as our customers, who are guaranteed a healthy, genuine, and delicious menu.

For us, the dish should be simple and speak with its few high-quality ingredients: since 2015, we have built a trusting relationship with our breeders, bringing organic Tuscan and certified IGP Chianina beef into our kitchen.
